Bikini

Makes enough for 10 servings

Ingredients for the Clementine Syrup (yields 750ml)

300ml recently pressed clementine juice
200ml recently pressed lemon juice
500g caster sugar

Ingredients for the Premix (makes 850ml, serving 10)

400ml decent vodka
100ml London dry gin
150ml peach-flavored liqueur
200ml clementine syrup (from the recipe above)
Fresh cranberries, to garnish
Mandarin essential oil, as a final touch

Method

For the Cordial: Combine all the ingredients into a saucepan, heat until it reaches a gentle boil, mixing to dissolve. After that, remove from the heat allowing it to reach room temperature fully. Pour into a sterilised bottle, cap it keeping it chilled, where it will keep for around four weeks.

For the Premix: Pour all the spirits and syrup into one sizeable container, allow it to infuse for one hour, then filter it best through a fine cloth, making it fully clarified.

To serve: Add 85ml from the batch mix into your stirring glass packed with ice, and agitate gently for one minute until cold. Pour into an frosted cocktail glass or similar, garnish with a few cranberries and complete it by giving it a brief mist of the essential oil over the drink.
